Cocoa beans, drying in the sun on retractable ‘boucans’, must be turned each day to dry evenly. The easiest way to do this is to shuffle through them, turning them along the way

It is not written into law, but it is certainly tradition that every roof on the tiny island of Saba in the north-eastern Caribbean is painted red. The colour goes beautifully with the resplendant green of the vegetation.
